Almond Flour Pizza

Vivi invited some friends over for dinner the other night. Since I had just gotten back from Bilbao eating Pintxos (tapas) every night, I was in the mood to go with the small plates. I’ve been experimenting with almond flour recently and decided to give personal sized almond flour pizzas another shot. In the past they had some out a bit flakey. A little xanthan gum  helped cure that problem 🙂

2 cups almond flour
1/2 tea spoon of baking powder
2 teaspoons of xantna gum
2 eggs
a tablespoon of olive oil
crushed basil

My toppings:

1. Smoked oyster, pesto, artichoke hearts, parmesan
2. Collard greens, feta, pesto (would have put olives on there if I had em)
3. Fig spread, goat cheese, thinly sliced apple

Cooking instructions:

add the dry ingredients
add the wet ingredients
mix it up
flatten out a small ball about the size of a ping pong ball
bake for about 10 min (3/4 baked)
add ingredients
bake for another 5 – 7 min

    Sounds wonderful! I haven’t had pizza ever since I discovered I had a gluten sensitivity. Can’t wait to try this recipe 🙂
